3 Awesome Food Recipes For RVers On The Road
Here are 3 awesome food recipes to make in your RV while on a road trip.
1) Cozy Apple Cider
What you need:
- 2 quarts apple cider
- 1/8 teaspoon ground ginger
- 1/4 cup brown sugar
- 1 orange, cut into wedges but unpeeled
- 1 teaspoon whole cloves
- 2 cinnamon sticks
- small square of cheesecloth
What to do:
Put cinnamon and cloves in cheesecloth and tie up.
Combine all ingredients, including cinnamon and cloves, in crockpot.
Simmer on low for 3 hours. Serve hot.
2) Cheesy Sausage and Potato Frittata
- 1/2 pound ground sausage
- 4 cups frozen, diced potatoes
- 6 large eggs
- 4 tablespoons butter
- 1/2 cup diced red onion
- 1/2 cup full fat sour cream
- 4 cups sharp shredded cheese
What to do:
Preheat oven to 375.
Combine butter and potatoes in medium skillet on medium heat. Cook until potatoes are medium brown, or about 10 minutes.
Beat eggs with sour cream in medium bowl.
Set aside potatoes when cooked. Put onions and ground sausage in skillet and cook until sausage is cooked all the way through.
Remove from heat and layer half of the potatoes and half of the cheese on top of the sausages. Pour egg mixture on top.
Layer on the remaining potatoes and cheese and bake for 15 minutes.
Broil for about a minute or two until cheese is fully melted. Serve hot.
3) Asian Chicken Salad
What you need:
- 4 cups baby spinach
- Wasabi sauce
- 1/2 cup carrot slices, finely chopped
- 1 pound skinless, boneless chicken
- 1 cup snow peas
- 1/2 cup chow mein noodles
What to do:
Grill chicken until completely cooked through. Season with salt.
Mix chicken with all of the remaining ingredients, excluding wasabi sauce. Once it is thoroughly tossed and mixed, top with wasabi sauce to taste.
