3 Great Stove Top Recipes For Your RV Adventure
The call of the road is loudly alluring as you drive along, enjoying beautiful scenery, but it can go quickly silent when dinner time rolls around. Cooking in an RV can be challenging, but here are 3 great stove top recipes that are simple, healthy and delicious.
1. Extra-Creamy Mac and Cheese
Nothing says comfort like an old childhood favorite, and this version cuts the steps to keep it easy and quick to prepare. Toss in diced ham, crumbled bacon or your favorite veggies to “adultify” the dish.
Bring 1 cup of milk to a low boil in a saucepan, stirring constantly. Add 1 cup elbow macaroni or shells and reduce the heat. Continue stirring until the pasta is cooked al dente. Stir in 1 cup shredded cheese — your favorite or a blend of cheddar, Monterrey Jack and mozzarella — and continue stirring until the cheese melts to gooey goodness. Cooking the pasta in milk, instead of water, makes this super creamy and delicious.
2. Stovetop Tex-Mex Chicken
Sprinkle chicken tenders with ground cumin, salt and pepper and saute them about 3 minutes on each side. Add corn kernels, chopped onion and chopped zucchini to the pan and cook for about 2 minutes or until the chicken is cooked through. Pour in jarred salsa and cook for another 2 minutes.
While the chicken gets all the deliciousness of the salsa and vegetables, warm some tortillas in a skillet. Fill them with the chicken mixture and top with shredded Monterrey Jack cheese. For an extra-special touch, add a dollop of sour cream or guacamole.
3. Spanish Tortilla
This omelet-style egg dish has a surprise ingredient.
Saute 1 cup chopped onion and 4 minced garlic cloves in olive oil about 6 minutes or until they are translucent. Remove them from the pan and set them aside. Whisk 4 large eggs with 1 tablespoon of fresh oregano (about 1 1/2 teaspoons dried), along with salt and pepper to taste, until the eggs are frothy. Add 1/2 ounce crushed kettle-style potato chips and pour the mixture into the skillet with a little oil. Cook the tortilla for 1 minute and then lift the edge of the eggs and tilt the pan to allow the uncooked mixture on top to flow to the bottom of the pan. Cook for 1 minute longer or until the center sets but is still soft. Top with the onions and fold the tortilla in half. Slide it onto a plate and garnish it with another 1/2 ounce crumbled chips and 1 tablespoon chopped oregano.
