Cheesy Chicken and Broccoli With Quinoa
Part of the advantage of RVing is that you don’t have to eat out all the time. That doesn’t mean that you want to be a slave to the small stove top in your RV! When you’re out and about, you want something fast and easy, but still healthy meals that can satisfy people who have been running around all day. This Cheesy Chicken and Broccoli with Quinoa dish takes about 30 minutes to make, and definitely fits the satisfaction bill.
Moving Past Pasta with Cheesy Chicken and Broccoli with Quinoa
This cheesy one-pot dish from Cooking Classy calls for quinoa and chicken, a delightful combination. If you don’t know, quinoa is a source of protein, even though it is a grain. It packs quite a healthy punch, and is a great grain for those who are eating gluten-free.
- 1 lb boneless skinless chicken breast, diced
- 3/4 cup chopped onion
- 2 cloves garlic (or equivalent minced from jar for ease)
- 1 T olive oil
- 1 can (14.5 oz) low sodium chicken broth
- 1/4 tsp dry thyme
- 1 cup dry quinoa
- 2 1/2 cups chopped broccoli (chop while quinoa is cooking)
- 4 oz shredded cheddar cheese
- salt and pepper to taste
Heat a deep skillet on medium-high and add olive oil and onion. Cook about 2 minutes and add chicken. After another 2 1/2 minutes stirring occasionally, add garlic and cook an additional minute. Chicken should be cooked on the outside (the inside will cook as it will be simmering). Add broth, thyme, and quinoa. Bring to a boil, then reduce heat to a simmer and cover. Cook for 12 minutes (here’s where you can chop up that broccoli). After the 12 minutes, add broccoli and put the lid on again. Cook another 8 minutes. At this point, you may need to carefully drain off any additional liquid, then add the cheese on top, heat another minute and serve!
Healthy doesn’t have to be at the expense of hearty, nor does it have to involve a difficult process. This simple recipe is sure to be a hit as well as hitting the spot and the mark with a delicious meal in one pot for super easy clean-up.
