Skillet Lasagna That’s Quick & Scrumptious
When you’re on vacation, you want to eat delicious food, but you don’t want to eat a lot of junky calories or foods that are overly processed all the time. Want a healthy, easy dinner recipe you can make on the stove top while you’re RVing? How about a real comfort food that will make you feel super satisfied while still being healthy? Nothing says real meal like skillet lasagna, and nothing could be easier than this recipe! (Adapted from SparkRecipes)
Stove Top Skillet Lasagna
- 1lb lean ground beef
- 1 small onion, peeled and chopped
- 2 cloves of garlic, peeled and chopped
- 1 large jar of your favorite tomato sauce
- 3/4 cup water
- 1 cup fat free cottage cheese
- 2 1/2 cups broken lasagna noodles (go whole wheat for extra healthy!)
- 1/4 cup parmesan cheese (low-fat for extra healthy!)
- 1 egg
- shredded mozzarella to garnish
Use a large skillet to brown the ground beef with onion and garlic. Drain excess fat, then add water and sauce. Stir in uncooked noodles, reduce heat, cover and cook 20 minutes or until pasta is soft. In a bowl, combine cottage cheese and parmesan, then add egg. Drop mixture in rounded Tsp into pasta and cook 5-8 minutes more, adding mozzarella to the top for the last few minutes.
Serve with sliced italian bread and butter, and you have a hearty meal that will work wonders on a rainy day or any day that you really want to have something home cooked.
