All About the Food: RV Recipes for Great Meals!

Whether you’re an occasional camper or you’re on the road full-time, there’s no doubt in your mind that space in your RV’s kitchen is at a premium. You need to be able to make your ingredients stretch longer and use them for more than one meal. These great RV recipes will allow you to make the most of your available space and stretch out your ingredients for your family–all without repeating the same meals the entire time you’re gone. This week-long list of recipes will allow you to make some great meals from the convenience of your RV stovetop, all while enjoying the same great nutrition and flavor options that you would be able to appreciate at home. No stove? It’s no problem when you have so many great RV recipes to choose from!

Your Shopping List

As you head out to the store to stock up, make sure you’ve got these key ingredients tucked in the kitchen of your RV. Take the time to look over the recipes and make sure that you have enough of each item for the crew you’re taking on the trip with you: for example, you’ll need enough chicken for four distinct meals (though some of them use less chicken than others) and enough ground beef or turkey for three. This list also assumes that you have basic spices, including salt and pepper, already in your RV kitchen.

  • Ground beef (or turkey, if you prefer the healthier substitution)
  • Mozzarella cheese
  • Italian seasoning
  • Garlic
  • Lasagna noodles
  • Pasta sauce
  • Chicken broth
  • Ricotta cheese
  • Pizza dough
  • Olive oil
  • Tortillas
  • Shredded cheddar cheese
  • Ketchup
  • Mustard
  • Pickles or pickle relish
  • Chicken thighs
  • Lemons or lemon zest
  • Rice
  • Onions
  • Carrots
  • Celery
  • Chicken broth
  • Butter
  • Half and half or heavy cream (note: choose the same one you use in your coffee and just get a bigger container for multipurpose use!)
  • Soy sauce

The RV Recipes

Day One: Stovetop Lasagna from Yellow Bliss Road

This great one-pot stovetop lasagna will allow you to put together a great comfort food meal without dirtying up the entire kitchen! Designed to take just one pot to create, Stovetop Lasagna makes for a quick, easy meal that will taste just like you spent all day slaving away in the kitchen. It’s not traditional camping fare, so it will be sure to delight even the members of your family who are tired of having the “same old stuff” all the time.

Day Two: Cheeseburger Quesadillas from Yammie’s Noshery

That ground beef (or turkey!) that you put to great use in your lasagna on night number one gets repurposed to great effect in these cheeseburger quesadillas on the second night of your trip. Use your favorite burger seasonings from what’s already stocked in your spice cabinet! This might not be what the traditional Mexican quesadilla recipe looks like, but it’s a lovely treat that will have the entire family coming back for seconds–if you can get them made fast enough.

Day Three: Lemon Pepper Chicken from Noshtastic

lemon chicken rv recipes

Time to shake it up and break away from the ground beef  RV recipes with this simple but amazing lemon pepper chicken recipe! Designed to be cooked wherever you like, this recipe is perfect for cooking on the stovetop inside or taking to the grill outside, if you have that option in your campground. Add a vegetable and you have the perfect combination for an amazing meal that will have you going back for seconds…if there are any left! Note: this recipe may create some jealousy in other campers, who won’t be able to help but note the amazing smells coming from your campsite.

Day Four: Greek Chicken with Lemon Rice from RecipeTin Eats

Repurpose the chicken thighs you didn’t cook on night number three in this fantastic Greek chicken dish. The chicken is fantastic. The rice, however, is even better. There’s something extra-special about rice that’s had the chicken cooked on top of it, absorbing all of the flavors from the chicken and your spices. This is one of those great dishes that no one would ever guess had to be prepared in a limited amount of space, within an RV kitchen. You won’t even have a chance to miss your oven! Top it off with a vegetable favorite to round out this excellent meal or eat it alone to truly savor the flavors.

Day Five: Creamy Chicken and Wild Rice Soup from Tip Hero

Inevitably, it’s going to rain at least one day on your trip. You try to plan around it, but since you’re in an RV, at least you won’t end up as wet and muddy! Take advantage of that rainy day to curl up with a cup of this amazing soup and a good book. It’s also a great choice for those cooler nights when you want to sit outside, but it’s a little bit chilly. Who needs a cup of coffee late at night when you can enjoy this great mug of soup instead? Shred some of the leftover chicken from your other RV recipes or cook up a couple more boneless chicken thighs or breasts just to throw into this great soup.

Day Six: Chicken Fried Rice from Skinnypoints

This is one of the RV recipes that requires a few substitutions in order to make it with the items you already have on your list, but you’ll discover that it enhances the flavor beautifully! Use olive oil instead of canola, leave out the peas, and you have a great dish that doesn’t require any additional ingredients to take up space in your kitchen. Not only that, it’s a unique flavor choice, unlike the others you’ve prepared throughout the week, making it a great choice when you’re looking forward to shaking up your meal plan a little. As an added bonus, this is a true one pot dish: there’s no need to prepare anything else to go with it in order to have a full meal.

Day Seven: Skillet Pizza from the Kitchn

Use up that extra pasta sauce and put together a pizza that uses all of your favorite toppings! Any of the small portions you have left over from your previous recipes will make a great addition to your skillet pizzas. Be creative! If a topping looks like fun, why not try it out? This method is best if you’ll only be making a couple of pizzas, since it can be time-consuming; however, it’s a great way to break up the monotony of “camping food” with a dish that’s traditionally made in the oven or acquired by grabbing takeout.

Going camping is a great adventure–and the best adventures require a fantastic array of RV recipes that will fill you with all the great nutrients you need in order to enjoy your trip. You shouldn’t have to feel as though you’re sacrificing flavor or nutrition in order to head off on your camping trip, and these great recipes ensure that you don’t have to miss out on either one. Hot dogs and s’mores over the campfire are fun, and there’s certainly room in your meal plan to enjoy them. Sometimes, however, you just want a real meal, even if you have a limited amount of space to prepare it. When you’re stuck with just a stovetop, these seven great RV recipes are the perfect way to transform your evening meal into something spectacular.
