Shrimp and Gnocci with Asparagus In Under 30 Minutes
When you’re in your RV, you don’t want to waste time cooking, but you don’t want to eat badly either. Eating out is nice occasionally, but what you really need is healthy stove top recipes that are done quickly. While this recipe is all those things, it is also a bit of a splurge with shrimp and gnocchi with asparagus!
Skillet Shrimp and Gnocchi with Asparagus from Eating Well
- 1 T plus 2 tsp olive oil
- 1 pkg shelf stable gnocchi (16 oz)
- 1/2 c sliced shallots
- 1 lb asparagus, trimmed, cut in thirds
- 3/4 c chicken broth (reduced sodium)
- 1 lb raw shrimp, peeled and deveined
- 2 T lemon juice
- 1/3 c grated parmesan
- salt and pepper to taste
Heat a large nonstick pan over medium heat with 1 T of the olive oil. Add gnocchi and cook 6-10 minutes stirring often until plump and golden. Transfer to a bowl.
Add remaining oil and shallots. Cook, stirring, until shallots start to brown. Add chicken broth and asparagus. Cover and cook 3 to 4 minutes, until asparagus is tender. Add shrimp, salt and pepper and cover. Simmer 3 to 4 more minutes until shrimp is pink and cooked through.
Add lemon juice and return gnocchi to the pan and combine. Stir, cooking an additional 2 minutes to heat through. Remove from heat and sprinkle with parmesan cheese. Let stand two minutes to allow cheese to melt.
