Awesome Food Recipes for RV Trips: Try This Easy Southern Feast

If your RV travels take you to the southern United States this year, try some authentic southern cuisine. But you don’t have to visit a restaurant to sample these regional specialties. Use one of these awesome recipes made especially for your RV trip for a taste of Southern culture. Eat this delicious meal with friends and family as you enjoy the outdoors. Of course, these recipes are great regardless of where your travels take you!

For dinner, try our one-pot recipe for jambalaya. This popular Cajun and Creole dish is easy to put together and cooks everything you need in just one pot. Prep it ahead of time for a quick 30-minute meal! When you’re done with dinner, skip the roasted marshmallows and try our delicious banana pudding. Warm summer days call for cool, delicious desserts, and there’s nothing better than a sweet pan of this southern treat. It’s easy to whip up this recipe in your RV! Just mix everything together and you’re ready to go. Of course, a southern meal is never complete without sweet tea! With these recipes, you’ll have everything you need for an incredible meal.

One-pot main dish: Jambalaya

Serves 6. Total time: 1 hour, but just 30 minutes if you prep everything ahead of time!

  • Spice mix:
  • 2 whole bay leavessouthern-jambalaya-RV-cooking
  • 1 tsp. cayenne pepper
  • 1 tsp. salt
  • 1 tsp. garlic powder
  • 1 tsp. white pepper
  • 1 tsp. dried thyme
  • 1/2 tsp. black pepper
  • 1/4 tsp. rubbed sage
  • Other Ingredients:
  • 1 medium onion, diced
  • 3-4 celery sticks, diced
  • 1 large green bell pepper, diced
  • 4 Tbsp. butter
  • 1/2 lb. ham or smoked sausage
  • 2 c. chopped chicken
  • 2 cloves garlic, minced
  • 14 oz. can crushed tomatoes
  • 2 1/2 c. chicken stock
  • 1 1/2 c. uncooked rice, converted if possible

If you’re planning meals before your trip, prepare the spice mix before you leave. It’s easy to store your spice mix in a small plastic bag or an unused spice jar. You can even chop the vegetables before your trip, they’ll keep for a day or two in the refrigerator, and are fine for a few weeks in the freezer. You can even chop the meat and freeze it before you leave.

If you’re choosing meals as you go, this is still a great recipe for an RV trip. Stock up on a few spices and get the vegetables and meat you need. If you’re near the coast, feel free to add 1/2 lb. shrimp or crayfish to the mix!

Start by mixing all the spice mix ingredients together in a small bowl. Dice the onion, celery, and green bell pepper. On a separate cutting board, cut the ham or sausage and chicken into bite-sized pieces. If you’re adding shrimp or crayfish, prepare them now.

Melt the butter in a 2-quart saucepan over medium-high heat. Add the ham or sausage and cook, stirring frequently, until it begins to brown. This usually takes around 3 minutes. Next, add the chopped chicken and cook until it begins to brown, about 5 minutes. Stir in the seasoning mix and half of the onion, bell pepper, and celery. Stir in the minced garlic. Cook, stirring frequently, until the vegetables are tender and start to brown.

Add the rest of the vegetables and the crushed tomatoes. Cook for 1 minute, stirring constantly and scraping the bottom of the pan. Stir in the rice, then add the chicken stock and mix everything together. Bring to a boil, then reduce to a simmer and put the lid on the pan. Simmer for 20 minutes or until the liquid has absorbed into the rice. Remove bay leaves, then serve hot.

Tips for success

  • This recipe is somewhat spicy, but you can reduce the heat by cutting the white pepper and cayenne pepper in half. You can also substitute paprika for the cayenne for a smoky, mild flavor.
  • Prep everything ahead of time so it’s easy to throw this together after a long day of hiking, fishing, or driving.
  • Feel free to substitute other types of meat to suit your preferences. You can also remove the meat and add mushrooms and a can of white beans for a vegetarian version. Just swap the chicken stock for vegetable broth.

Dessert: Banana pudding

Serves 10 – 12. Total time: 20 minutes.

  • 3 cups cold milk
  • 2 small packages of instant vanilla pudding
  • 30 vanilla wafers (or use the whole box!)
  • 3 large bananas, sliced
  • 16 oz. tub whipped topping

Whisk the pudding mix with the milk for two minutes. If you have time, let this set up in the refrigerator. 3 hours of cooling time results in a very stable pudding, but it will still taste great without the additional set time.

Arrange half of the wafers on the bottom and sides of a two-quart serving bowl or two-quart baking pan. Top with half of the banana slices and half of the pudding. Add another layer of wafers, followed by the remaining banana slices and pudding. Cover everything with the whipped topping. Serve immediately.

Tips for success:

  • Add whatever you like to this flexible recipe. Found some strawberries at a farmer’s market? Just add them in with the bananas. Want a stronger banana flavor? Use instant banana pudding instead. For a tropical twist, add coconut flakes at the end!
  • Let the pudding set for at least one hour before you assemble the recipe.
  • If you won’t eat the entire dish tonight, dip the banana slices in lemon juice so it will taste good the next day.
  • This recipe doesn’t keep very well, so consider cutting it in half if there are just a few people traveling with you.

Drink: Sweet Tea

Serves 4 – 6. Prep time: 10 minutes, plus cooling time.

  • Ice
  • 2 family size black tea bags
  • 1 c. sugar
  • 2 quarts of water
  • Optional add-ins: orange, lime, and/or lemon slices, or fresh mint leaves

In a small saucepan, heat 2 cups of water on the stove until the water boils. Add the tea bags and remove from the heat. Steep for 5 – 7 minutes. While the water is still hot, pour in the sugar and stir until it dissolves completely. If you’re using mint leaves, add them at this time and remove them after steeping. Fill a two-quart pitcher with ice, then add a little water and the rest of the tea. Fill the rest of the pitcher with water and stir everything together.

Add orange, lime or lemon slices if you’re using them. Serve immediately or refrigerate until ready to serve.

Tips for success:

  • If you want a drink that’s less sugary, cut the sugar in half. Add orange slices for natural sweetness.
  • Caffeine-free tea works just as well as the caffeinated variety.
  • Mix with lemonade for a tasty treat!
